Mutton Beliram—Beliram, the head chef of Maharaja Ranjit Singh, the famous ruler of the Sikh empire in the early 19th century, created this dish. It soon became the favourite dish of the royal household and was named after him.
Mutton is slow-cooked in yoghurt and subtly balanced aromatic spices, allowing the mutton's natural flavour to be the dish's star. Another uniqueness in this dish is the use of coriander in three forms: powdered seeds, crushed seeds, and fresh leaves. It’s a perfect blend of royal sophistication and rustic Punjabi heartiness.
