Chicken Biryani (chicken thigh off the bone) - Hyderabadi style Chicken dum biryani.
The chicken is marinated in spices and herbs, yoghurt and lemon juice. It is spread in a single layer in a flat, heavy-bottomed pan and then layered with part-cooked rice, fried onions and Ghee. The pot is sealed and then slow-cooked for hours. The steam generated from cooking the chicken cooks the rest of the rice, and the whole dish is infused with flavour.
