Dappalam is traditionally made with any assorted vegetables. We do it here with pumpkin and butternut squash. It’s a very old dish from Andhra and its taste is unique - sour, tangy, sweet and spicy all at once. The sourness comes from tamarind and the sweetness from jaggery, and all in all it’s an explosion of all those tastes in a single bite. It’s best served with a steaming bowl of rice and is perfect for any weather.
